Ingredients
- 2 medium zucchinis, sliced into thin rounds
- 1/2 cup breadcrumbs (Panko or regular)
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon smoked paprika (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup all-purpose flour
- 2 large eggs
- Cooking spray
Instructions
- Prepare the Zucchini:
- Slice the zucchinis into thin rounds, about 1/8 inch thick.
- Set Up the Breading Station:
- In a shallow dish, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Place the flour in a separate shallow dish.
- In another shallow dish, beat the eggs.
- Bread the Zucchini:
- Dredge each zucchini slice in the flour, shaking off any excess.
- Dip the floured zucchini slice into the beaten eggs, letting any excess drip off.
- Coat the zucchini slice in the breadcrumb mixture, pressing lightly to adhere. Place the breaded zucchini on a plate or baking sheet.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
- Cook the Zucchini Chips:
- Lightly spray the air fryer basket with cooking spray.
- Arrange the breaded zucchini slices in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
- Lightly spray the tops of the zucchini slices with cooking spray.
- Air fry at 400°F (200°C) for 8-10 minutes, flipping the slices halfway through the cooking time, until they are golden brown and crispy.
- Serve:
- Remove the zucchini chips from the air fryer and serve immediately with your favorite dipping sauce, such as ranch or marinara.
Tips
- For extra crispiness, use Panko breadcrumbs instead of regular breadcrumbs.
- Adjust the seasonings to your taste; you can add a bit of cayenne pepper for a spicy kick.
- Make sure not to overcrowd the air fryer basket to ensure even cooking and crispiness.
