Skip the delivery and make this Slow Cooker Teriyaki Chicken at home. The chicken is cooked in a delicious, sticky sauce and served over rice. Serve lots of fresh stir fried vegetables on the side to make this a healthy meal.
Ingredients
2 lbs boneless chicken breasts (or leg quarters)
1/4 cup brown sugar
½ cup soy sauce
2 tablespoons cider vinegar
½ teaspoon ground ginger
1 clove minced garlic
⅛ teaspoon pepper
2 teaspoons cornstarch
2 teaspoons water
Instructions:
Insert the chicken into the crockpot.
Mix together the sugar, soy sauce, vinegar, ginger, garlic, and pepper in a bowl, and pour the concoction over the chicken.
Cook on low for 4-5 hours.
Take the chicken out of the slow cooker, cut it into cubes, and put it to the side.
Strain the cooking liquid into a skillet and heat it up.
Make a mixture of cornstarch and water in a small bowl, and gradually add it to the boiling liquid.
Reduce the heat to a simmer and let the sauce thicken for 2-3 minutes.
Put the chicken back in and coat it with the sauce. Heat it through.
