This is a tasty dish that’s perfect for the slow cooker. It cooks nice and slow, it’s perfectly chewy, and it’s something that will practically melt in your mouth the moment you try it.

The best part is that you can leave this to cook for a longer period of time, and from there, when it’s ready, you just have to pull it out, and then boom, you’ve got dinner rightfully planned right there for you to enjoy with your family, and something that you won’t be able to get enough of.

Ingredients:

5 slices bacon finely chopped
3 lbs. boneless beef chuck cut to 1 inch cubes
1 cup red cooking wine
2 cups chicken broth
1/2 cup tomato sauce
1/4 cup soy sauce
1/4 cup flour
3 garlic cloves finely chopped
2 Tablespoons thyme finely chopped
5 medium Carrots sliced
1 pound baby potatoes I used tri color
8 ounce fresh mushrooms sliced
fresh chopped parsley for garnish

Steps

Get a skillet and then take the bacon, cooking this on medium-high heat levels until it’s nice and crispy. Add the bacon to your slow cooker.

Take the beef and season this with some salt and pepper, adding this to the same skillet the bacon was in, searing this about 2-3 minutes a side, and then, add this to the same slow cooker.

Put red wine in there, scraping the brown parts of this on the side. Let the wine simmer, and then, as it reduces, add in the tomato sauce, the chicken broth, and the soy sauce. Gradually whisk the flour in until it becomes thick, almost like a gravy. From there, add it to the slow cooker.

Add in the garlic, the carrots, the thyme, the potatoes, and the mushrooms all to the slow cooker. Stir all of this together, and then, cover it with the lid.

Cook this on low for about 8-10 hours or so until everything is nice and tender, especially the beef. You want this to practically be fork-tender when you have this.

You can then garnish this with fresh parsley and serve!

Tips

Do I have to cook this on low?

You do not have to. Some people have good luck with this dish on high. You usually need about 6 hours on high heat for it to cook all the way through.

Do note however that the beef is a little bit harder than if you let it cook on low, since it doesn’t have much time to soak up all of the flavors, which can impact the way this tastes.

What’s a good side dish for this?

Honestly, because it’s so hearty, a side item that’s hardy is good. Green beans is one, but if you want, you can also cook some mashed potatoes to add a nice starchy flavor to this one.

Can I save it for later?

You sure can! The beauty of this is that it fits nicely in the slow cooker, you just have to, after you’ve put it in there heat it up for about an hour and maybe add a little more water to this, especially fi you’re not a fan of dry beef.

This is a good dish which can be saved for up to 7 days, sometimes more depending on the type of cooking you do and how long you cook this.
