This is a tasty, great casserole dish that literally just requires one pot. Unlike other recipes where you need multiple dishes, especially casseroles, this one is simple.

It’s perfect for those nights when you don’t feel like cooking, and want something simple, effective, and well, that easy. The beauty of this as well is that this is a recipe which is so good, your whole family will love it. They’ll be begging you to make this every single week, and who knows, it could change the scope of family dinner nights together, that’s for sure.

INGREDIENTS

-1 lb ground beef

-1 small onion, diced

-salt & pepper, to taste

-2 tbsp. Taco seasoning

-1 tsp. garlic powder

-1 cup long-grain white rice,

-1 1/2 cups beef broth

-1 15 oz. can corn, drained

-8 oz. tomato sauce

-1/2 cup salsa

-1 cup shredded cheese

Steps

Get a big skillet, and then cook your ground beef, seasoning this with some pepper and salt over a medium-high heat skillet, until it browns.

When you’re finished, drain the extra grease that you get from this.

Take the pan and then put it back onto your stove. Top it with some beef, and then the garlic powder along with the taco seasoning, mixing all of this together.

Take the rice and put it inside the pan with the beef as well. Once mixed, add in the broth, the corn, the salsa, and the tomato sauce, taking all of the ingredients and stirring all of this together until fully incorporated and nicely mixed together.

With this same pan, heat it up, boiling this, and then, add a lid to the top of this in order to cover the whole thing. Turn the heat to low, and then let it continue to sit a t a low simmer for around 18-20 minutes, or until the rice becomes nice and tender, and everything is mixed together

Put cheese on top of this, and then cover this up once more. let this cook for another 2-3 minutes until it fully melts the cheese. Then, serve!

Can I save this for later?

Some people like to save these dishes for later, as most casseroles have the beauty of being that simple. this one can be saved for later, it’s just something that won’t sit well in the fridge for too long.  You should try to make sure that you eat it within a week or so for best results.

Can I put it in a baking dish?

You can when you’re done cooking it. It does not need to be cooked in an oven after you’ve done this, the stovetop cooking already made it. But if you want to put it in the fridge or to preserve it, you can definitely do this.

Can I add extra ingredients to this?

These ingredients are great for the job, but if you want to add a bit of spice, adding some peppers or chorizo is never a bad thing, and it can add a nice flavor. There are other herbs as well which work for this too, and they offer a variety of flavors to the dish, making it taste even better, and offering unique flavors as well.
