Ingredients:
2 pounds ground beef
2 (16 ounce) packages kielbasa sausage, sliced into 1/2 inch pieces
2 cloves garlic, chopped
1 onion, chopped
2 (14.5 ounces) cans peeled and diced tomatoes, drained
4 medium baking potatoes, peeled and diced
2 (15 ounces) cans pinto beans, with liquid
2 (15.2 ounce) cans whole kernel corn, with liquid
1 (14.5 ounces) can diced tomatoes with green chile peppers, with liquid
1 (10 ounces) package frozen mixed vegetables
4 cups of water
2 teaspoons ground cumin
2 teaspoons chili powder
1 pinch salt and pepper to taste
Steps
- Get a big skillet and add the oil to it, along with medium-high heat. Put the beef in there, crumbling it over this.
- Sauté the garlic, sausage, along with the onion in this, cooking the entire mixture in this until there isn’t any pink left on the meat.
- After that, drain the rest of the grease before you put this into a big pot, and make sure everything’s cooked.
- Add in the potatoes and the tomatoes to the pot so they’re combined. Then, put the corn, mixed veggies, pinto beans, the diced tomatoes with the chiles intact, and also the water to everything, creating a nice, thick soupy mixture.
- After that, season this with chili powder, cumin, pepper, and salt. Make sure it’s seasoned to flavor.
- Simmer this on medium-low heat for as long as you want. If you want it to be nice and thick, you can cook it all day! If you’re pressed for time though, make sure you do let it sit on a low simmer for at least an hour.
- Serve it!
