Liver and onions probably does not sound that appetizing. Liver is a meat that not everyone enjoys, and some people who hate liver refuse to eat this otherwise.
Can this recipe really make someone who hates liver love it? Yes. It’s an interesting, and very nutritious dish, so it’s one that, if you do end up liking it, there’s a lot of great benefits to this.
Be mindful however of cooking. The one thing that ruins this dish is if you overcook the liver, making it really gross in the process. Be mindful of cooking times!
Ingredients
2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste
Steps
Take your liver and slice this up. Make sure they’re in bite-sized pieces, and then run this under water that’s cold to clean them off. Put them in a bowl.
Add milk to where it covers the whole liver.
Prepare the onions in the process. Ideally, let them sit there for about an hour or so. the linger the better because this removes the bitter liver taste out of this.
Take two tablespoons of butter and a pan, melt this on heat that’s medium. Separate the rings of onions, and then sauté each of these rings until they get soft.
Take the onions out, and then, melt the rest of your butter in the same pan, and then season the flour mixture with some pepper or salt.
Take the milk out of the liver by draining it, and then coat the liver pieces in the mixture of flour.
Melt your butter fully, turn the heat to medium high, and then take the liver slices coated in flour, putting them in the pan.
This step is important. Cook each side until it’s browned near the bottom, doing each side until it bottoms. Make sure you don’t burn this, since it removes the milk and it makes it taste a whole lot better.
Put the onions in, and then, make sure the heat is medium or a little bit lower, then cook it so that it tastes okay.
You may want to cook this until there’s barely a pink look to this inside when you slice up your liver to check.
Serve!
Tips
What can I do to make the liver taste good?
The two things you must do to make liver taste good is to soak this in milk for a long period of time to take the bitter tastes out of the liver.
The second thing is make sure the liver is cut into the smallest pieces possible. That way, it’s able to soak the milk up fully, and you’ll be able to get it cooked to the proper extent.
The third thing is to not overcook. When it’s done, remove this from your heat, and then, serve it. If you notice the pink is almost fully gone, or gone in some cases, that means it’s done, so take it out and don’t let it sit there for much longer.
