Chicken quesadillas are super easy to make, and they provide a great dinner item that you will enjoy. In this recipe, you’ll learn everything that you need to know to make these possible, and to provide a wonderful recipe for this.

INGREDIENTS

2 bell peppers, thinly sliced

1/2 tsp. chili powder

1 ripe avocado, sliced

1 lb. boneless skinless chicken breasts, sliced into strips

1/2 tsp. ground cumin

4 medium flour tortillas

2 c. shredded Monterey jack

2 c. shredded cheddar

2 scallions, thinly sliced

Freshly ground black pepper

1/2 onion, thinly sliced

1 tbsp. extra-virgin olive oil

Kosher salt

1 tbsp. vegetable oil

1/2 tsp. dried oregano

Sour cream, for serving

Steps

Get a skillet and heat it up to medium-high heat, and then heat up the oil. Put the onion and peppers into there, seasoning it with pepper and salt, and then proceed to cook for about five minutes or until it softens, then put it on a plate

Put the rest of the vegetable oil in there on a medium-high level of heat. Stake the chicken and add the spices, pepper, and slat to this, and then stir it all together in there every so often, until the chicken is nice and cooked. This should take about eight or so minutes. Place this on a plate

Put a tortilla in the skillet and then have the top half of that get sprinkled with the cheese, the chicken, the onions and peppers, and the green onions and a couple slices of avocado. Fold this into one another until it’s halved and then let it cook three minutes, flip it over, and then cook it for another 3 minutes. Repeat this four times to create four different quesadillas

Get some lime wedges to garnish this, slice the quesadilla into this size, and then top it with some sour cream to really enhance the experience that you’re desiring for this as well.

Tips

Do you need to add chicken to this?

Chicken is what’s called for in the recipe but if you don’t’ like chicken for one reason or another, you can use something else as an alternative, but usually chicken is the ideal additive to this.

What’s the best tortillas to use with this?

Flour or corn tortillas are usually used. Corn tortillas offer a more traditional flavor, but flour ones are becoming a lot more popular.  In some Mexican areas, they may use these but born tortillas are a lot more classic.  The buttery flavor of this due to the cheese definitely is something you want to have too.

Is it bad if the cheese spills out of these?

You will have that happen, and it can sometimes be a bit worrisome.  This actually causes the crispy parts of this to it the burnt parts of this, in order to give a fatty, salty taste to this that really does crunch with this as well, so don’t’ be afraid to use this.

What’s the best cheese for this?

We tend to use cheddar and Monterey jack, but if you don’t like those, or if you’d like to substitute it for something else, as long as the cheese melts, you can definitely get a great result out of this. A cool thing about this is that the Monterey jack does give it a soft and buttery taste that’s something that you want to definitely consider eating too.
