INGREDIENTS

FOR THE CHICKEN

1/2 c. all-purpose flour

1 c. shredded mozzarella

1/2 tsp. garlic powder

Freshly ground black pepper

Vegetable oil

1 1/2 c. panko bread crumbs

Kosher salt

1 1/2 lb. boneless skinless chicken cutlets

2 large eggs, beaten with 1 tbsp. water

1/4 c. freshly grated Parmesan, plus more for garnish

FOR THE MARINARA

Freshly ground black pepper

1 (28-oz.) can crushed tomatoes

Pinch crushed red pepper flakes

2 tbsp. freshly chopped parsley, plus more for garnish

Kosher salt

2 tbsp. extra-virgin olive oil

4 cloves garlic, sliced

1/4 c. water

1/2 small onion, finely chopped

Steps:

To begin, start by preheating the oven to 400 degrees. For the chicken, you want to make a station for it by first making different bowls, one with garlic powder, one with the parmesan and panko, and of course one with eggs. You then want to get the chickens ready by first seasoning this with pepper and salt, and then, cover the entire thing with flour, shaking off the extra parts of this. Dip this into your egg mixture to start, and then, dip this into the mixture of bread crumbs. Do this with the rest of the chicken, and then, put them each on a plate.

Get a skillet and then heat up about a quarter of the oil on medium heat. When the pan begins to feel hot, but isn’t smoking, put the chicken in, and then cook this 5-7 minutes until this becomes a golden brown color, and make sure to flip this at the halfway point. Put this on a plate lined with paper towels and then drain this.

Then, you want to make the marina. You want to start with a pot that’s heated on a medium kind of heat, heating up your oil. Put the onion along with the garlic in there, and then cook this until this softens, usually about 4 minutes. Put the water and the tomatoes in there, and then season this with the pepper, salt, and some red pepper flakes. Make sure to let the mixture simmer for around 10 minutes, and then take it off the heat, and then add the parsley to this, stirring it in.

Get the sauce and put it in a baking dish, and then put the chicken over the top of this. Add mozzarella to the top, and then bake this for about 10-12 minutes until the cheese melts. Sometimes, you can broil this too for another few minutes until you have a golden cheese, about 3 minutes or so.

Is it okay to fry the chicken?

Yes, you definitely wat to do this, especially if you want a chicken that’s crispy and also has a crunch to this. It’s not a deep fry either, so it won’t be too covered in oil if that’s what you’re worried about.
