INGREDIENTS
Cooking spray, for pan
1 1/2 lb. baby mushrooms
2 tbsp. butter
2 cloves garlic, minced
1/4 c. breadcrumbs
Kosher salt
Freshly ground black pepper
1/4 c. freshly grated Parmesan, plus more for topping
4 oz. cream cheese, softened
2 tbsp. freshly chopped parsley, plus more for garnish
1 tbsp. freshly chopped thyme
Steps
Turn the oven on and preheat it to 400 degrees. Take a baking sheet and grease this with some cooking spray to it. Take the stems off the mushrooms and chop the stems roughly, then put the caps of these mushrooms on there.
In a skillet, melt butter over medium heat, then add the stems and cook it till the moisture is mostly gone, usually after 5 minutes. Put the garlic in there and cook it for a minute until it’s fragrant, and then toast the breadcrumbs for about 3 minutes or so, then season this with some pepper and salt, and let these cool down
Mix together the stems with the cheese, thyme, parsley, and then add pepper and salt over this one, and then fill each of the case of the mushrooms with this, sprinkling more parmesan over these
Bake these for about 20 minutes or until the tops become a nice, golden color and then garnish it with a bit more parsley to serve this!
