In our house, dessert is essential, and it is non-negotiable. I have been working toward healthier dessert alternatives and found that even decadent desserts have versions that are a bit healthier. Peach cobbler has always been a favorite of mine and my family is a huge fan as well. This recipe works so well because it is quick, easy, and does not hit you with sugar overload!
I have made this for friends, and they all were amazed at how fantastic it is. Berries are also great in this recipe so you can adapt the fruit for whatever you are craving and what fruit you have on hand. Raspberries and peaches together are one of my favorite combinations.
I have also used gluten free cake mix and it was delicious. This is a great option for those who cannot have regular cake mix or if you are making this for a group. Sometimes those who cannot have gluten don’t make it known and they just skip the foods containing gluten. They will be thrilled!
Ingredients
2 pounds of frozen peaches – not with added sugar
1 box yellow cake mix – dry mix only
1-2 cans (12 oz.) of Sprite Zero, 7-up Zero, Diet Sprite (Pick your favorite clear diet lemon-lime soda) *See Notes
Directions
Preheat the oven to 350° F.
Lightly butter, or spray with cooking spray, a 9×13 baking dish. Set aside.
Spread the frozen peaches out evenly and cover the bottom of the baking dish.
Sprinkle the entire bag of dry cake mix over the peaches.
Gently press the dry cake mix down so it falls between the peaches.
Slowly, pour the diet clear soda over the cake mix. Do not mix.
Cover the cobbler with foil and bake for 20 minutes.
Remove the foil and continue to bake for another 40 minutes.
Allow to cool for 10-15 minutes before serving.
Notes
• If there is still dry cake mix after pouring one can of soda, add more just until you have covered all the dry patches.
• When you uncover after 20 minutes, spray the top with a little cooking oil spray for a crispier texture on top.
• Diet/Zero Sugar Ginger Ale also works well as a substitute for Diet/Zero Sugar lemon lime soda.
• A dollop of Cool Whip or a bit of whipped cream on top is wonderful. Ice cream is too!
• Use fresh peaches if you prefer – they are so delicious when in season!
• If you can find in your store a sugar free cake mix, it will work perfectly and lower the sugar even more.
• Frozen blueberries, raspberries, blackberries, or strawberries are variations that are wonderful. You can also mix up different fruits!
• If you are not concerned about sugar, or only have regular soda, it will still turn out great.
