An easy-to-make dessert with only a handful of ingredients, these chocolate rice Krispie balls are really crunchy and super delicious. A sweet treat that will delight kids.. And adults too!

Easy desserts are one of my favorite things. Take last year’s thanksgiving for example. I was ill-prepared for all the bustle I was to face with lots of family coming around. Thankfully, I had a recipe for an easy dessert which I pulled to my advantage and prepared for my entire family…..I’m talking cousins upon cousins I didn’t even know I had! Thankfully, this dessert is not just easy, it also makes a large batch to feed a large crowd.

The chocolate rice Krispie balls recipe is one that you must have in your dessert arsenal. It’s not just a life-saver recipe. This is something to make on a regular for your family (especially if you have many kids), when friends come to visit, when you’re hosting an event, or just to gift to a neighbor or coworker. This dessert as I’ve said is really easy to make, doesn’t require too many ingredients and the taste is delightfully delicious. Really, this is something that everyone must love – they have no choice!

The combination of peanut butter and chocolate is the secret to this recipe. Those are two of my favorite flavors and mixing them just gives you a feel of what heaven smells like. These chocolate Krispies make a great dessert for parties, filling the entire room with their aroma. Plus, you could easily pass it around in a tray for people to pick with their fingers – less cleaning up after!

This is one you may want to start making early or make ahead. It requires a lot of time for freezing. So be patient

Ingredients

for the balls:

½ cup of peanut butter.

3 tablespoons soft butter.

1 teaspoon vanilla.

1 cup of Rice Krispies.

½ cup of chopped pecans.

1 cup of shredded coconut.

for the chocolate:

1 package of chocolate chips.

1 square of sweet chocolate.

Directions

For the balls:

Step 1:

Mix all the ingredients together in a large bowl. Ensure the mix is uniform, then let sit in the freezer for about four hours or overnight

Step 2:

Take out of the refrigerator and mold the chilled mixed ingredients into balls. Place in a tray and place in the refrigerator and let chill for an hour and a half.

For the chocolate:

Step 3:

Melt the chocolate chips and sweet chocolate together in a double boiler. Keep the boiler on low setting so that the chocolate remains soft.

Step 4:

Take the balls out of the refrigerator and then drop them one at a time into the melted chocolate mix. Use a fork to roll them so that the chocolate covers each ball completely.

Step 5:

Place the chocolate-covered balls on parchment paper and allow them to sit in the fridge until you’re ready to consume. Store in an airtight container and allow to warm up to room temperature before consuming. This allows the balls to be softer.

Tips

These chocolate Rice Krispy balls are best enjoyed within a couple of days. They will keep well for longer, up to 5 days, but the texture won’t be as soft.
