The most interesting part of this recipe that I love so much is that it is very simple, classic and quick to prepare. Thanksgiving Sunday is always lit with this recipe. I found this recipe when I was in my second year in university. I wanted to try something different with my roommate who was a medical student. She barely had the time to eat…i would  prepare this meal and keep it in the refrigerator so she can have it for breakfast before leaving the house.

I also prepared this recipe during my holiday. My favorite part of the entire holiday is the brimming refrigerator. I mean 2-3 days of eating leftovers (a.k.a. no cooking) is absolutely acceptable, which is fantastic . I believe that if we all looked deep within ourselves, we could all agree that the last thing we want to do after dining and/or making a massive turkey dinner is anything that requires time in the kitchen.

However, every year I make an exception for this recipe because mashed potatoes always outlast all other leftovers. They are invariably thrown out. With just a dump, a mix, and a plop, this recipe transforms garbage into a delectable grab-and-go breakfast.

Simple, innovative, and unquestionably tasty. Leftover mashed potatoes, sausage, cheese, eggs, chives, and a pinch of cayenne pepper make for a substantial breakfast. Mix everything together, pour it into a pan, and enjoy cute muffin-shaped delicacies for the entire week. I have tried this recipe and I know how perfect the leftover was, very yummy!

Ingredients

700g cold mashed potatoes, about three large potatoes

2 shallots (scallions) thinly sliced

1 cup tasty cheddar cheese, grated

½ cup of parmesan cheese, grated

3 large eggs, separated

¼ cup full cream milk

¼ cup melted butter

2 tablespoons fresh thyme leaves or 2 teaspoons dried thyme leaves

1 teaspoon onion powder

1 teaspoon fine salt

½ teaspoon fine white pepper

How to prepare

Step 1:

Preheat the oven to 430 degrees Fahrenheit on bake, not fan, and lightly butter a 12 cup normal sized muffin tin. Then place all ingredients except the egg whites in a large bowl and mix thoroughly.

Step 2:

In a separate bowl beat egg whites till stiff and airy, fold a quarter of the whites into the mixture, and fold through the mixture to slacken it.

Step 3:

Gently fold remaining whites into the mixture and spoon into the muffin tin. Allow to bake on the middle shelf for 20-25 minutes or until golden.

Step 4:

Remove from the heat. Serve and enjoy!
