Fantastic low calorie cookie to prepare for weight-watchers and even the whole family. Made with peanut butter so it’s loaded with lots of flavor.
I came across this recipe some three years ago while searching for easy recipes to make. Easy!! That first caught my attention. But amidst the craze of finding something really easy, super delicious, and excitingly flavorful, I noticed something else – this cookie had only 33 calories, which was actually minute for its size.
At that time, I was actually looking for cheat meals, since I was on a diet and trying to lose weight. But finding this recipe meant that I could actually enjoy the goodness of cookies, but still maintain my healthy diet lifestyle. Since I discovered this, I have made this for my family and even made it at a party once.
Although I was nervous, all of that was quelled in a short while as everyone from family to friends fell instantly in love with this. It has become our go-to appetizer at home and that is possible thanks to how easy it is to prepare. If you’re weight watching, you may want to serve this alone. But if you’re not, then you can top up on the deliciousness of this delight with some banana cream cookie sandwich. You can also enjoy with a warm glass of milk.

Ingredients
1 cup of All-purpose flour
¼ tsp Baking soda
⅛ tsp Table salt
3 Tbsp reduced calorie margarine
2 Tbsp smooth reduced fat peanut butter
½ cup Packed light brown sugar
¼ cup Sugar
1 large Egg white(s)
1 tsp Vanilla extract
2 spray(s) Cooking spray
Instructions
Step 1:
In a small bowl, combine flour, baking soda and salt, mix well and set aside. In a separate bowl, combine butter and peanut butter, beat on medium speed until it is smooth. Then add both sugars gradually and beat until blended, add egg white and vanilla and beat on low speed until it is smooth, while beating add the flour mixture and mix until just blended.
Step 2:
Put the dough into a large piece of plastic wrap and roll into an 8-inch log, then wrap log in plastic wrap and freeze for about 2 hours.
Step 3:
Preheat oven to 350 degree Fahrenheit and coat 2 large baking sheets with cooking spray. Remove the cookie dough from freezer and slice crosswise into about twenty-four 1/3-inch-thick slices.
Step 4:
Place the slices an inch apart on the baking sheets. Bake for about 8-10 minutes or until golden around edges. Then transfer the cookies to wire racks to cool completely. Serve!
