An amazing snack that is simple to make with just flour, egg and Panko-Parmesan coating. It’s healthy, crunchy, incredibly crispy and insanely addicting. Every bite tastes like perfection.

If you’re a binge eater, snacking on any and everything all day long, then I’ve got just the perfect healthy snack for you. I discovered this a few years back while browsing through mum’s old recipe book. I tried it once and I haven’t looked back since. This incredible crispy snack required zucchinis and fresh parmesan which I had handy then, and after a few minutes in the kitchen, I took the bite that would change my life forever.

Believe me when I say that you will not be able to put these down. And the best or should I say scariest part of it all is how easy it is to make! These crisps come together in only 15 minutes and are deep fried to utter crisp perfection with a simple flour, egg, and Panko-Parmesan coating. You can absolutely bake them for a healthy option, but I went the extra mile and fried them to achieve that perfect golden-brown crust. My kids love it, my husband loves it, I’m crazy addicted and I’ve made these like 3 times over the last two weeks, and I’m sure I’ll make them again. Try serving this at a family dinner and see what they think.

Ingredients

½ cup vegetable oil

1 cup Panko

½ cup grated Parmesan cheese

2 zucchinis, thinly sliced to ¼ -inch thick rounds

½ cup all-purpose flour

2 large eggs, beaten

Directions

Step 1:

In a large skillet, heat the vegetable oil over medium high heat. Then combine Panko and Parmesan in a bowl and set aside.

Step 2:

Dredge zucchini rounds in flour, dip into eggs, and then dredge in Panko mixture, pressing to coat in batches. Add zucchini rounds to the skillet, 5 or 6 at a time, and cook about a minutes on each sides or until it is golden and crispy.

Step 3:

Transfer to a paper towel-lined plate to drain and serve immediately.

 Tips

Panko is a Japanese breadcrumb that you may get in the Asian department of your local supermarket.
