The chocolate eclair cake is a no-bake delicacy that looks and tastes like chocolate eclairs. The filling for this recipe is graham cracker layers with pudding and whipped cream. It’s finished off with a chocolate frosting created from scratch!

My mom used to prepare this no-bake quick chocolate eclair cake, and it’s one of my family’s favorites. It takes about ten minutes to put together—all you have to do is create it the day before you need it, set it out on the table with forks, and walk away. This cake was one of the most popular sweets at my childhood potlucks, so I decided it deserved a second chance.

You don’t need to be a baker to layer graham crackers with pudding and whipped topping, then spread everything in rich chocolate frosting. Overnight, the refrigerator performs all of the work for you, softening those layers into a delightfully sweet, creamy, chocolatey cake that tastes like you put in a lot more effort than you did.

Ingredients

1 box honey graham crackers

For the filling:

2 packages of French vanilla instant pudding
1 (8 ounce) container of thawed cool whip
3 cups milk

For the chocolate glaze:

2 ounces of unsweetened chocolate
3 tablespoons butter
3 tablespoons of milk
2 tablespoons Karo syrup
1 teaspoon vanilla
1 1⁄2 cups powdered sugar

The process

Step 1:

Line a buttered dish with graham crackers and add the pudding mix and milk together.

Step 2:

Fold in Cool Whip, and pour half of the mixture on the crackers, then add a second layer of crackers, then the remaining pudding mixture, and then a final layer of graham crackers.

Step 3:

Melt the chocolate glaze over medium heat. Then remove from heat and set aside.

Step 4:

Beat about one or half cups of powdered sugar and pour it on the crackers.

Step 5:

Refrigerate over the night and serve.
