This is a recipe that my mother always made as i grew up, and now that I’m older, I plan to get my kids hooked on it too!

Ingredients

2 large baking potatoes
1⁄2 pound lean bacon
¾ cup of shredded mild cheddar cheese
½ cup sour cream

1⁄4 cup milk
2 tablespoons of melted unsalted butter
1 teaspoon dried chives
½ teaspoon salt

½ teaspoon ground black pepper
½ teaspoon garlic powder
¾ cup of shredded mild cheddar cheese

How to Prepare

Step 1:

Preheat the oven to 400 degrees and grease the casserole dish. Then use a toothpick to make a few holes into the potatoes.

Step 2:

Allow the potatoes to bake in the preheated oven for about an hour or when it is fully done, then cook it for 15 minutes.

Step 3:

Place the bacon in a skillet, then cook over medium high heat, turning occasionally for about 10 minutes or until it is brown. Then drain the slice of the bacon on a paper towel and crumble.

Step 4:

Cut a thin slice from a side of each potato and scoop out the flesh carefully and place in a bowl. Dispose the skin. Then mix the shredded cheddar cheese, sour cream, milk, butter, chives, salt, black pepper and garlic powder with the potatoes.

Step 5:

Then spread the potato mixture on the greased casserole dish, add the cheddar cheese and crumbled bacon. Then leave it to bake in the preheated oven for about 10-15 minutes or until it bubbles. Set it aside to cool for 5 minutes before serving.

Tips:

You can make this recipe ahead of the time and cover with a foil and refrigerate. To reheat, bake casserole with the foil on 350 degrees for about 40 minutes, then remove the foil. Add cheese and bake again for another 15 minutes or until the cheese is melted.
