Easy kolacky cookies are a delicious recipe made from flaky cream cheese dough. It is a Czech sweet pastry filled with cookies with jam and dusted with icing sugar. They melt on your tongue the moment you put them in your mouth.

These cookies bring a nostalgic feeling with them. They remind me of my childhood, enjoying these delicious delights in summer. Now, I occasionally make them at home, and every single time, I’m reminded of my childhood again.

These cookies are straightforward to prepare and taste so delicious. It’s an excellent appetizer or side dish option for any meal of the day.

Ingredients

For the cream cheese dough
1 St (110 g) unsalted butter (at room temperature)
4 oz (110 g) cream cheese (at room temperature)
1 and ¼ cups (160 g) all-purpose flour
For the filling
⅔ cup (220 g) pastry fruit filling
Powdered sugar (for icing)

How to prepare

Step 1:Allow enough time for the butter and cream cheese to come to room temperature before using.

Step 2:Combine the butter, cream cheese, and flour in a large mixing bowl. Begin by combining the ingredients with a fork. Then, knead the dough smooth with your hands only after it has come together in a uniform mass.

Step 3:Wrap the dough in cling film and freeze for 10-15 minutes, but no longer. To keep the dough from sticking to the work area, lightly dust it with flour. Then, roll out the dough into a regular rectangle of 18-inch thickness.

Step 4:Cut the rolled-out dough into approximately 2.12-inch squares. In the center of each square, spread about 1 to 12 teaspoons of jam.

Step 5:Scoop out opposite ends of the dough with a kitchen knife and fold them over the filling one by one. Finally, lightly press the dough’s folded ends together.

Step 6:Transfer the kolacky cookies to a baking sheet lined with parchment paper with care.

Step 7:Preheat the oven to 340 degrees Fahrenheit. Place the kolacky on a baking sheet in the preheated oven and bake for 15 minutes, or until brown.

Step 8:Dust with icing sugar and set aside to cool after baking.

Tips:

•The optimum time to eat kolacky cookies is while they’re still warm. Serve with a cup of decent coffee or tea on a dessert tray. Kolacky cookies are softer and less flaky the next day than fresh out of the oven.

•Sprinkle flour on the dough before rolling it out. Also, flour your hand and run it over the rolling pin you’ll be using to roll out the dough. The final dough, however, should be slightly sticky.

•Allow any remaining kolacky to cool completely before storing it in an airtight container. Keep them in the fridge for up to four days. The kolacky cookies can also be frozen. They can be frozen for up to 6 months in an airtight container.
