HERB ROASTED CHICKEN THIGHS IN CREAMY WHITE WINE SAUCE

Ingredients:

3 pounds chicken thighs bone-in, skin-on

2 tbsp butter

1 tbsp olive oil

Italian seasoning (divided)

Salt and pepper

3-4 thyme sprigs (leaves only)

½ c white wine

1 medium onion diced

1 c chicken stock

3 garlic cloves chopped

Salt and pepper to taste

½ c heavy cream

1 tbsp flour for thickening the sauce

Directions:

Prepare the oven and preheat to 200 degrees C or 400 degrees F.

Place a large skillet on the stove and turn the heat to medium-high.

Add 1 tbsp of olive oil and allow it to become hot.

Rub the chicken thighs with Italian seasoning, salt, and pepper. Make sure to coat them well.

Add the chicken thighs into the hot skillet and sear each side for 4 minutes or until they turn brown. Remove from the skillet onto a clean plate.

In the same skillet, add butter and allow it to melt.

Add the onion and sauté until a bit caramelized.

Add the garlic, thyme, and 1 tsp of Italia seasoning. Sauté until aromatic.

Add 1 tbsp of flour, then whisk and cook for about a minute.

Pour the wine gradually and stir every addition until well blended. Scrape the bottom to get the brown bits.

Turn the heat up to high, then pour the heavy cream and chicken stock. Stir and simmer for 5 minutes or until it reduces its volume. Add more seasonings if needed.

Put the chicken thighs back to the skillet, then spoon the sauce over until well coated.

Transfer the skillet inside the preheated oven and bake the chicken for about 35 minutes.

Remove from the oven, then garnish with freshly chopped thyme.

Serve hot with rice, mashed potatoes, or roasted veggies. Enjoy!
